A New Chapter in Inclusive Dining at Nonna's Cucina

For many people living with dysphagia, eating out isn't just difficult—it often isn't possible. The lack of suitable menu options can lead to social isolation, with many people missing out on celebrations, family lunches, coffee catch-ups, and the everyday joy of sharing a meal.

We wanted to help change that.

Our goal was to create a menu that doesn't compromise on safety, nutrition, or presentation. Every meal is thoughtfully prepared to meet the International Dysphagia Diet Standardisation Initiative (IDDSI) Framework, giving customers and their loved ones greater confidence when dining with us.

Our Dysphagia Menu Includes

Our menu caters for a range of texture-modified dietary needs, including:

• Easy to Chew (IDDSI Level 7)
• Soft & Bite-Sized (IDDSI Level 6)
• Minced & Moist (IDDSI Level 5)
• Pureed Meals (IDDSI Level 4)
• Thickened Liquids (IDDSI Levels 1, 2 & 3)

Every dish has been developed with care to ensure it is both safe to eat and enjoyable, because texture-modified food should still look and taste like a meal worth sharing.

The response since launching the menu has been incredibly encouraging. Seeing customers enjoy a café experience that many thought they'd lost has reaffirmed why this initiative matters so much.
